Sauteed Spiced Mushrooms  – Spice Spice Baby


 

I recently shared some simple, spiced, sauteed mushrooms on my Instagram stories and so many of you wanted the recipe so despite it being a no recipe recipe, here we are! 

 

Daily intake of mushrooms is associated with a lower cancer risk. They are also great for our gut microbiome and our immune system and this is a simple, delicious and fool proof way to enjoy them. 

 

This recipe is really intended to demonstrate that you can use spices in the simplest ways every single day. Instead of waiting for that special recipe to pull out your spice collection, start adding them to your everyday favorites. Your health and your taste buds will thank you for it. 

 

Sauteed Spiced Mushrooms 

RECIPE

Yield
serves 1-2

Ingredients

  • 1 tablespoon olive oil 
  • 2 garlic cloves, minced
  • 1/4 teaspoon minced ginger
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Pinch red chili powder
  • 2 cups chopped mushrooms of choice like portobello, maitake, shiitake or white button
  • Salt 
  • Pepper 
  • 1/4 teaspoon sumac 
  • 1 teapsoon freshly chopped parsley

Method

Heat the oil on medium high heat until it shimmers. Add the garlic and cook until fragrant, 1-2 minutes. Add the ginger and sautee for a minute. Add the spices and sautee for a minute. Add the mushrooms, salt, pepper and sautee for 5-8 minutes adding a splash or two of water if needed. Top with sumac and a sprinkling of freshly chopped parsley and serve.
