I love lentils. But sometimes the whole Indian lentil / dal situation feels like too much work!
Lentils are nutrient-dense powerhouses packed with vitamins, minerals, plant-based protein AND fiber so I wanted to create a lazy version so we can enjoy them without much effort. And I can truly attest to how delicious these turned out! Minimal effort. Maximum flavor. That’s how I like to roll.

Ingredients
1 cup skinless red or yellow lentils (I love red lentils also known as masoor)
1/2 teaspoon turmeric
4 teaspoons olive oil
Salt
Pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
Pinch of red chili
1 teaspoon sumac
1 teaspoon Everything Indian spice blend (or Everything but the bagel seasoning)
1 lime
Method
Combine the lentils with 3 cups of water and the turmeric in a pot and bring to a boil, skimming off the foam as it arises. This will improve digestibility and reduce gassiness from the lentils.
Reduce the heat to a simmer and cook with the lid partially on for 20-30 minutes until the lentils are dissolved and creamy. You can add more hot water if you like a more soupy texture.
Spoon the cooked lentils into a bowl. Drizzle with olive oil and sprinkle with salt, pepper and the spices. Mix well and enjoy!
